7 Tablespoons cornmeal
1 Tablespoon sugar
½ teaspoon salt
½ cup milk
Procedure
Place the cornmeal, sugar, and salt in a bowl and pour boiling water over them to scald the cornmeal.
Beat the mixture to a smooth consistency, then beat in the milk.
Grease a heated griddle, drop the batter by spoonfuls on the griddle, and fry until golden brown on each side. For thinner johnnycakes, flatten each cake with a spatula.
